This traditionally washed coffee of an unclassified cultivar that was grown on a micro-plot within an estate farm located on the western slope of Volcan Tocana in Chiapas. It doesn't get any rarer than this, with this small plot being the only place in the world this unique cultivar is grown.
The coffee is fully washed after pulping, fermented under water for 48 hours, then soaked in fresh spring water for 48 hours, and then dried in the sun on raised beds.
The result is a complex, juicy coffee with bright notes of lime and kumquat that are balanced by honey, marshmallow and brown sugar sweetness. It's medium bodied, extremely clean, and chuggable in any brewing format.
