These beans were part of an extremely small, hand-selected microlot from a cooperative of farms in the Sidama region of Ethiopia. The beans are of an heirloom landrace cultivar known as Kurume. The washing station utilized a double fermentation process for the beans...first through an anaerobic process, followed by hulling to prepare the beans for open-air parchment fermentation, and then finally the beans were fully washed. This process adds layers of clean, delicate flavors, such as lemon, lime, peach, chamomile, and lilac that are brought into balance by wildflower honey sweetness.

Natural sweetness in coffee is difficult to capture and is fleeting in the roasting process, as you must catch the roast at the moment when everything comes together perfectly inside the bean in order to preserve the sugars before they evaporate away. However, when you do capture it, the sugar will often elevate the flavor, as is true with this offering. Extremely refreshing, this coffee would be great brewed through drip and pour over or cold brewed, and served hot or over ice. A great one to share with friends and family.
